WHere is an easy version of a drink from the seasonal cocktail list. This is a batch pre-mixed which is bursting with flavours associated with holiday season, making it perfect for a celebration. Reserve the remaining cordial to use in morning drinks, puddings, or to mix more rounds of the drink.
The Bikini Cocktail
Yields 10 servings
To make the Clementine Cordial (makes 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g fine sugar
For the Drink (yields 850ml, to serve 10)
400ml good quality vodka
100ml dry gin
150ml peach liqueur
200ml clementine syrup (as made above)
Fresh cranberries, as a garnish
Mandarin essential oil, for finishing
Instructions
Making the Citrus Syrup: Combine the listed components in a pot, heat until it reaches a simmer, stirring so the sugar melts. Then, take off the burner allowing it to cool entirely. Decant to a sealable bottle, seal and refrigerate it in the refrigerator, it can be stored for up to four weeks.
For the Batch Mix: Combine the specified liquids into one large bottle, leave to sit for one hour, then filter it preferably using a fine cloth, making it perfectly clear.
When ready to serve: Pour 85ml of the premix into a stirring glass filled with ice, gently stirring gently for a minute until cold. Strain to a frosted cocktail glass or a similar vessel, garnish with a few cranberries and finish with a quick spritz of mandarin oil over the drink.
